I am very taken with my Eastman irvin but the Matt finish curently favoured by them is a mystery to me. I am taking advantage of the wintry weather but I would wear it more if it had more character.
They dont come out of small change so I am reluctant to start messing with it.
what non destructive methods can I use to give the surface some sheen so it looks like the leather jacket it is?

You could also try Mister Sheen or equivalent furniture polish.

Sure it should do the same job, just always looks a little too greasy for me. I would use RM Williams conditioner, a cream paste, but that may not be readily available in the UK.

RM Williams have a shop down Bond Street, London, but there will be other franchises around. I swear by it on all my leather goods (except the gimp! ).
