Twice recently I've seen them use a Leather Filler to repair tears, wear holes etc, I'd never heard of this before in 50 years of making leather jackets but it seems to work................on the TV screen at least.

You've nailed the pocket position
If you are nervous about cutting the leather, why not mark the pattern out in chalk (or similar) on the wrong side of the leather first so you can double check everything before cutting into any leather

Might I also suggest slightly smaller pockets, to my eye they are a wee bit high, they could be closer to the waistband and possibly be fractionally smaller to get the best balance.

Possible but unlikely, what you refer to is "cabbage". This is where a factory is supplied with material to make a fixed number of pieces. If the cutters manage to get the said number of garments without using up all the raw materials then the excess belongs to the factory.............or on some...
