It depends on which province you live, but the past 10-15 years here in the west you get only 2 or 3 days per year with subfreezing temperatures (around -5 Celsius). And usually a couple of weeks with temperatures around 5 Celsius.

My strong advice is to avoid any sheepskin. I've spent 6 months in Rodos with the Corps of Engineers (and another 26 years in Greece) and I can assure you that even a thinner sheepskin jacket (D1 or B6) will be used once every two years.

My last FS jacket (a year ago, a United A2 in horsehide) smelled awfully as well, I couldn't get rid of the smell at all. After trying everything I put it in the washing machine; they obviously use stretched leathers because my jacket shrunk almost two sizes.
I remember indeed Ken commenting on how it is impossible to repair seams that are glued; however he was referring to the seams of high end Japanese civilian repro's, where they skive and glue the leather at the seams so they get a thin and neat looking seam.
Make sure to contact them before ordering, they usually have many different hides in stock and you can further customise (lining options, 10-hole models, soles, etc).
Could be. Though at the time the pilots (as well as the average person) were quite shorter than today and most of the flight jackets I know had a back length of 24-24,5 inch. Again I might be wrong.
